Feta-stuffed meatballs with olive and cucumber salad and roasted sweet potatoes

A quick and delicious Mediterranean recipe from HelloFresh

One of our favourite things to do when we travel (remember travelling?) is to visit local grocery stores and markets. We could spend hours walking up and down the aisles, discovering new and exciting food and ingredients that we don’t necessarily find at home and which are new to us.

But even when we are at home, we actually enjoy grocery shopping. The browsing, the choosing, the inspiration that comes when we are surrounded by the building blocks of culinary delights. What we don’t enjoy is coming home with bags full, and then having to put the groceries away.

Neither of us have walk-in pantries and although our storage spaces are generous (second fridges and shelves in the garage help), they are not endless. But, we love to cook and to experiment with all sorts of flavours and cuisines. Our limited space and limitless cooking enthusiasm poses a conundrum, and this conundrum looks like overflowing shelves, partially used bottles of sauces and spices, and money in the garbage when we have to toss out more than half a container of spoiled shiitake mushrooms because our recipe only called for half a pack.

Along with storage space and money, the other thing that is limited, is time. Both of us work full time, as do most people, and yet we still have families that expect to be fed every day…sometimes more than one time per day! Seriously! Regardless of how much we actually enjoy grocery shopping and cooking, sometimes we wish that the whole process could just be made a little bit easier. Well guess what? It can be!

Meal delivery kits have become increasingly popular for several good reasons. They don’t take away the joy of cooking, but they do take away some of the added stress and work. You know, like settling on a recipe for something delicious and realizing mid-way through your craving or cooking that you’re missing a key ingredient. Don’t you just hate that?!

Meal delivery kits also mean that when your recipe calls for 2 shiitake mushrooms, that is exactly what you’re going to get; no more waste! And, no more scouring grocery stores looking for a certain spice or sauce. From the comfort of your own home, you pick your recipe and know that when it is time to cook, you’ll have everything that you need in one convenient box.

Equipment

  • Baking sheet
  • Zester
  • Bowl

Ingredients

  • 500 grams ground beef
  • 2 medium sized cucumbers
  • 20 grams garlic
  • 10 grams fresh oregano
  • 2 tsp roasted cumin, ground
  • 680 grams sweet potatoes, cut into cubes
  • 113 grams red onion
  • 60 grams mixed olives
  • 1 cup feta cheese, crumbled
  • 2 lemons
  • olive oil

Instructions

  • Preheat the oven to 425°F.
  • Toss the sweet potatoes with the cumin and a drizzle of oil on a baking sheet. Season with salt and pepper. Bake in the centre of the oven, stirring halfway through cooking, until golden-brown, 22-23 min.
  • While our potatoes are roasting, prepare your fresh ingredients. Cut the cucumber into 1/2-inch cubes. Mince or grate the garlic. and chop the olives (removing any pits). Chop the oregano leaves and zest and then juice the lemons. Set all ingredients aside.
  • To prepare your meatballs, in a medium bowl combine the beef, garlic, feta and half the oregano. Season with salt and pepper. Roll the mixture into 1-inch round meatballs.
  • Place the meatballs on a foil-lined baking sheet. Bake in the centre of the oven, until golden-brown and cooked through, 8-10 min. In order to ensure that your meatballs are fully cooked cut one open and be sure that there is no pink inside.
  • While your meatballs and sweet potatoes are cooking, in a medium bowl whisk together the lemon zest, lemon juice and a drizzle of oil. Season with salt and pepper. Toss in the cucumber, red onion, olives and the remaining oregano. Divide the olive and cucumber salad, roasted sweet potatoes and meatballs between plates. Enjoy!
