For the longest time we thought that the fanciest ice cream flavour which existed was Neopolitan. This was the ice cream that our parents always brought home from the grocery store, and we loved it. We loved the many options which existed in that one container. Simply strawberry? No problem. A bit of vanilla and chocolate? You bet! Lots of vanilla and a small taste of the chocolate and strawberry? Totally doable. We also loved that the carton held many secrets. Taking the ice cream from the freezer and realizing that almost all the strawberry ice cream was gone meant that our dad had enjoyed quite a few scoops – strawberry is his favourite flavour.

Years ago, probably 15 or so, one of us became obsessed with the idea of owning an ice cream maker. With young children at the time, we convinced ourselves that it was mandatory to serve them home-made ice-cream; domesticity and mothering at its finest.

Several months following the decision that our kitchen small appliances were lacking, there was a sale, and an ice cream maker was purchased. It came home, the box was opened and the instructions were quickly read. What was this? In order to make ice cream you first had to freeze the actual ice cream maker? Okay, so ice cream making would have to wait a few hours; actually 24 hours. No problem.

Whenever we go out for breakfast or brunch with our family, one thing is certain; if there is a menu option which combines bananas and chocolate, someone will be ordering it. Everyone else will try to sneak a taste between bites of their own fruit cup and egg white omelet.

This winning combination of flavours can be enjoyed in so many ways. In this post-Pascha period, when we are lucky enough to have some tsoureki left over, it only seemed natural to use a favourite sweet bread in a recipe that also combines the wonderful pairing of chocolate and banana. And so, the banana and chocolate tsoureki French toast was born!
