These muffins contain no eggs, are dairy-free, refined sugar free and won’t even mess up a bowl. Combine all the ingredients in a blender or food processor, mix and you are ready to bake.

What are Medjool dates?

These easy vegan apple oatmeal muffins are sweetened by Medjool dates (and maple syrup). Medjool dates are a variety of dates known for their sweetness and soft texture. They are larger than most dates and although the exterior appears almost leathery, the meat inside is soft and has a caramel like flavour. They are truly delicious, and we love to incorporate them into desserts like our vegan date cake and our peanut butter date bars. They are also amazing with turned into a sweet and savoury appetizer, like our bacon wrapped dates stuffed with feta.

Medjool dates are native to Morocco and come from the date palm tree. They are now grown in various parts of the world, including North America, the Middle East, Africa and South Asia. They are incredibly delicious, very nutritious and it’s no wonder that they are so popular. Everyone in the world can made our easy vegan apple oatmeal muffins!

Are Medjool dates good for you?

They are actually. Despite the fact that they are so sweet, they are naturally sweet! They contain significant amounts of fiber, iron and vitamins and minerals such as potassium, B vitamins, magnesium and copper. The dates helps make these vegan apple oatmeal muffins so good for you.

There are several reports which indicate that Medjool dates may potentially protect your heart, aid in your digestion, and may support brain and bone health. Their high antioxidant levels may also protect against some diseases like cancer or heart disease.

What kind of apples should be used in these easy vegan apple oatmeal muffins?

Honestly, any apples you have are good apples to use. Most recently we have been using a lovely apple called Ambrosia and the muffins have been delicious.

How to make easy vegan apple oatmeal muffins

This is one of the easiest recipes you can make. You will need a blender (a high speed blender is ideal) or a food processor. You will also need a grater so that you can grate your apple. Once your apples are peeled and grated, and you have removed the pits from your dates, pour all the ingredients into your blender. A quick whiz until everything gets blended up, and then pour batter into muffin cups and bake.

  • 2 cups large flake oats
  • 2 apples, peeled, cored and grated
  • 8 Medjool dates, pitted
  • cup olive oil
  • ¼ cup maple syrup
  • 2 tbsp ground flaxseed
  • 5 tbsp water
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ tsp vanilla extract

Instructions

  • Preheat your oven to 350 °F
  • Line your muffin tray with liners and set aside.
  • Combine all ingredients in a blender or food processor. Blend until combined and the batter is smooth. Be sure that the dates have been well blended.
    2 cups large flake oats, 2 apples, peeled, cored and grated, 8 Medjool dates, pitted, ⅓ cup olive oil, ¼ cup maple syrup, 2 tbsp ground flaxseed, 5 tbsp water, 1 tsp baking soda, 1 tsp ground cinnamon, ½ tsp salt, ½ tsp vanilla extract
  • Divide evenly among the 12 muffin cups. Bake in the middle rack of your oven for 15 - 17 minutes.
  • Allow to cool for 10 minutes before removing from the baking tray. Enjoy!

Notes

We like to store these easy vegan apple oatmeal muffins in the refrigerator.  They will keep well for a week.

    Can I replace flaxseed with some other ingredient – if so, please suggest some alternatives. Thank you.
