Χόρτα με ψωμί στη σχάρα. This post for dandelions greens and grilled bread is really just a composite of two other recipes we have already posted, with some small modifications. Still, we could not not share this recipe, because this open-faced sandwich is one that we grew up on, and it is all sorts of delicious!

The concept here is simple; after dandelions greens are cooked, Greeks like to toss them with a healthy amount of olive oil, fresh lemon juice, and a bit of salt and pepper. Often, that’s it! Sure you can add some dry oregano if you like, but that would usually be the extent of it.

Most years Pascha is a huge celebration in our family.  Immediate family, extended family, friends who are like family gather together to eat, drink, laugh and be merry.  Many people means much food and you can read all about our usual Easter celebrations over here.  This year, like last, our plans were usurped by the pandemic and each of us celebrated at our own homes, with our husbands and daughters.  Different, but still lovely.  As a result, our usual entire lamb on a souvla was replaced by a leg of lamb and a couple of shanks on the smoker at one of our homes, and grilled lamb chops at the others.

Have you heard of halloumi? If you haven’t, then we are happy to help you make it’s acquaintance! Halloumi is a Cypriot cheese traditionally made of sheep and goat’s milk, and although it is now enjoyed in many parts of the world, it really is most popular in Cyprus and Greece. Because of it’s very high melting temperature, it is a great grilling and frying cheese. It maintains it’s shape when cooked so no melting cheese mess with halloumi! Instead what you get is a crispy exterior and a soft, melt-y interior.

There is so much going on here! These spicy wraps are exploding with flavour, nutritious ingredients and pretty colours. Inspired by a recipe we found on The Kitchn website, which credited Trader Joe’s as their inspiration, this is our version of a vegan wrap that we believe is going to become a favourite of yours.

We came up with this recipe last spring when one of us catered a lenten brunch for our church youth group. By making the wrap filling and the slaw the day before, the morning of the event, all that was left to do was assemble them. Delicious, and convenient!

We love bacon.  Like, we love bacon, a lot.  We grew up in a home where bacon was not really something that was featured prominently.  Breakfast was usually an egg fried in olive oil with a side of feta, some Greek yogourt (before it was all the rage), or toast topped with tomato and feta.  Bacon, when we had it, was usually enjoyed at a friend’s house, or after begging our parents to buy some when we tagged along at the grocery store.  Our love of bacon has allowed up to come up with neat ways to incorporate it into our own cooking, like when we used it to wrap up dates and feta.  These bite-sized mezes are so great they even had our parents wondering why they never thought to cook with bacon themselves.  Really!?

Tsoureki and feta grilled cheese

Tsoureki and feta grilled cheese is a sweet, salty, crunchy and oozy grilled cheese sandwich that you’ll love!

For years, when we thought about grilled cheese we thought only about two pieces of white toast slathered with butter, with a slice of processed cheese in between them.  This would get fried in a non-stick pan and would usually be served with a cold glass of milk.  A thin, crispy but at the same time kind of soggy, sandwich…and we loved it.  It was one of the first things we learned to make ourselves when we were young, and we felt that we were teaching our parents a thing or two…grilled cheese was not something they grew up on. Now that we are older, and more culinary (we have a blog after all!), we still occasionally enjoy this classic…but we’ve also learned that there is more than one way to grill a cheese sandwich. The result? The original Mia Kouppa tsoureki and feta grilled cheese!
