School starts back soon and a new academic year always feels like an opportunity for new beginnings! Key to stress-free school year living is planning and organization and although we would love to say that we are always on the ball…that just isn’t always the case. Before bed searching for misplaced books or socks, snoozed alarms and rushed mornings, forgotten notes, lost lunch boxes, pimples on picture day….we’ve lived it all! And it isn’t over!

There are some things however that make us feel as though we’ve got a grip on life. As silly as it may sound, recipes like this one for egg zucchini muffins are one of those things. These portable, easy to reheat and eat egg muffins are so handy to have in the refrigerator. Make a batch and store them in a container for your family to grab and go on busy mornings. Pack a couple for lunch and along with some carrot sticks or a salad and you’ve got a pretty well-balanced meal.

The summer months tend to make life seem simpler. Maybe it’s the longer days, the warmer weather, the fact that the school year is done, or the simple breezy summer dresses that make getting dressed, well, a breeze! Whatever the reasons, we find that summer entertaining always seems easier than hosting during the other seasons. If you’re fortunate enough to have an outdoor space, where food like souvlaki or grilled veggies can be thrown on the grill and you don’t have to worry about tidying up your house, all the better. But even if you entertain indoors, summer fare is usually lighter, easier and quicker; who wants to spend hours in the kitchen cooking when there are summer cocktails to make and sip?

Our dad is the egg guy of the family. Although our parents usually cook together, and can each manage to make any number of dishes alone, there are certain recipes that belong almost exclusively to each of them. Our mom is the Queen of rizogalo for example, and our dad is the one who often turns to eggs to feed hungry mouths. This recipe which combines home cut fries, feta and an olive oil fried egg is one that he would make for us relatively often. Simple, satisfying, and a pretty well-balanced meal.

Whenever we’re in a rush and need to get a meal on the table quick, we tend to turn to either a pasta dish like spaghetti with olive oil and mizithra, or an egg dish, like an omelette full of Greek flavour.  Pasta and eggs are the start of so many quick, nutritious and easy meals.  In this recipe these two go-to staples are combined to create a recipe that was a regular in our home growing up.

This salad is satisfying in so many ways.  First, it delivers in flavour, with simple and fresh ingredients that come together in a delicious way.  Second, it manages to put a Greek spin on a classic salad making it, in our opinion at least, even better; feta and Kalamata olives tend to do that.  Finally, the presentation speaks to each of us, at different moments.  The initial plating, ordered and with each ingredient clearly in its place, satisfies the need for organization that one of us has.  When the salad gets tossed together to coat every little bit with the delicious dressing…well that’s organized chaos in a bowl, and hits home with the other one of us.
