Greek cheese topped bread
This simple recipe is made by topping thick slices of country bread with a combination of Greek cheeses, honey, herbs and then baking it until perfect.

I love taking a simple idea and making it just a little bit fancier. That is kind of what this recipe feels like. Nothing can be simpler than topping bread that is drizzled with olive oil with a spreadable homemade cheese mixture and then baking it. The result is really wonderful – warm, creamy, toasty. Simply delicious!

Key ingredients
Country bread I like to use thick country bread to make this recipe. in Greek, the type of bread that would be best is something called a fratzola (Φρατζόλα). This is a country loaf that is a large baguette. I use 1 inch thick slices.
Olive oil I only use Greek olive oil. The flavour and fragrance cannot be beat!
Ricotta This cheese is really mild tasting and beautifully spreadable.
Feta Only Greek feta please! Made with sheep milk or a combination of sheep and goat milk, this is the only type of feta to enjoy!
Egg One large egg is all you need to help bind everything together to top your bread beautifully!
Honey I love sweetening cheese with honey. I use either locally sourced honey or Greek honey.
Oregano Dry Greek oregano is perfect here! So much flavour in this dried herb.
Salt & pepper Basic seasonings that make most dishes better!

How to make it
Step 1
Drizzle one side of each slice of bread with olive oil and place on a baking sheet, oil side up.

Step 2
Mix together the remaining ingredients until well combined.
Step 3
Portion out the cheese mixture to spread it evenly over all four pieces of bread, spreading it so that it covers the entire surface.

Step 4
Bake in a preheated 350 degrees F oven for approximately 10 minutes until golden brown on top. Allow to cool for a few minutes and serve. You can drizzle additional honey over top if desired.

Helpful hints
This is really a very easy recipe but there are a few ways to make it even easier!
If you will be serving this to guests and want to be prepared you can mix up the cheese and store it in the refrigerator. Spread over your bread slices and bake just before servings.

Recipe variations
If you choose, you can also top your Greek cheese topped bread with slices of fresh tomatoes. This is a more dressed up version of the classic Tomato and feta toast that is often enjoyed for breakfast!

How to serve
There are so many ways to enjoy this great recipe. I sometimes serve this Greek cheese topped bread with a salad like a Maroulosalata (Greek lettuce salad) (Psilokomeni) or a heartier Chickpea salad and call it a meal! Other times I like to serve it as part of a meze platter. It also makes a great after school snack for the kids!

Greek cheese topped bread
Ingredients
- 4 slices country bread
- ¼ cup olive oil
- ½ cup ricotta
- ½ cup crumbled feta
- 1 egg
- 1 tbsp honey
- ½ tsp Greek oregano
- ½ tsp pepper
- ½ tsp salt
Instructions
- Preheat oven to 350 °F
- Drizzle one side of each bread slice with the olive oil. Place on a baking tray, oil side up.4 slices country bread, ¼ cup olive oil
- In a medium size bowl combine all of the topping ingredients and mix well with a fork, until combined.½ cup ricotta, ½ cup crumbled feta, 1 egg, 1 tbsp honey, ½ tsp Greek oregano, ½ tsp pepper, ½ tsp salt
- Divide the cheesy mixture into four equal portions and spread on each piece of bread, fully covering the surface.
- Bake in middle rack of your oven for 8 – 10 minutes until the top is golden. Allow to cool for a few minutes, and serve. You can drizzle some additional honey over top right before serving if desired.
