Preheat oven to 350 °F
Drizzle one side of each bread slice with the olive oil. Place on a baking tray, oil side up.
4 slices country bread, ¼ cup olive oil
In a medium size bowl combine all of the topping ingredients and mix well with a fork, until combined.
½ cup ricotta, ½ cup crumbled feta, 1 egg, 1 tbsp honey, ½ tsp Greek oregano, ½ tsp pepper, ½ tsp salt
Divide the cheesy mixture into four equal portions and spread on each piece of bread, fully covering the surface.
Bake in middle rack of your oven for 8 - 10 minutes until the top is golden. Allow to cool for a few minutes, and serve. You can drizzle some additional honey over top right before serving if desired.
