Full disclosure, I am addicted to potato chips. Any flavour, any brand, I love them all and can eat them by the (huge) bags full. It is the crunch, the seasoning, the saltiness that gets me every time! Growing up potato chips were a Saturday treat. My parents would by a bag during the weekly grocery trip for me and my brother and sister and we would devour them watching Saturday morning cartoons. Back then the chips came in packs of two or three clear plastic bags, packaged together in a larger outer plastic bag that displayed the flavour! This offered some portion control!

As I have gotten older I realize that perhaps indulging in potato chips, in all their fried glory, is probably not something to do very often. A great alternative is these easy homemade pita chips. Now, to be sure, too much of these is not a good thing either, but they are definitely healthier than the alternative. The pita chips are baked with a small amount of olive oil and seasonings you control. The crispiness is still there though; in fact, made right they are often even crunchier than potato chips!

Why I love this recipe

What’s not to love? This recipe is easy to make and pretty fail-proof. There are many ways you can make these pita chips your own but changing up the seasonings too.

They are an inexpensive snack or appetizer. They can be served in so many different ways! Serve them with dips, spreads, soups or even salads.

Key ingredients

You can get really creative when making homemade pita chips. I have listed the seasonings that I like to use (I like to keep it pretty simple) but you can use whatever you like! Let the pita be your canvas!

Pita The best pitas to use to make pita chips are the thin store bought ones. Although you can make these thin pitas even thinner by separating out the two layers, don’t. You will simply cut them into wedges.

Olive oil I use olive oil to make a spice paste that I then brush onto both sides of the pita. Great flavour, great crunch!

Paprika I alternate between using sweet or smoked paprika. Be sure to use good quality paprika because I have use cheap paprika in other recipes (like my lemon roasted potatoes) and it ends up burning in the oven. I don’t know what that is about, but don’t chance it.

Garlic powder I love the flavour of garlic powder! This is a great combination with the paprika!

Oregano We love to use dried oregano here, giving it a Greek touch!

Salt and pepper Basic seasonings that make everything better!

Ingredients which include: Pita chips, Olive oil, Salt, Pepper, Oregano, Garlic powder, and paprika.

How to make

Making homemade pita chips is so easy. Once you learn my easy technique, you will be making them again and again!

Step 1
In a small bowl whisk together the seasonings with the olive oil until well combined.

Step 2
Preheat oven to 325 degrees Fahrenheit.

Step 3
Use a pastry brush to spread the olive oil mixture all over both sides of the pita. Cut the pita into wedges or pieces to your liking using a serrated knife.

Basting the pita bread with the olive oil mixture.

Step 4
Place the pita in a single layer (it is okay if they overlap a little bit) on a baking sheet lined with parchment paper and bake in the middle rack of your oven for about 5 minutes. Flip them over and bake for another 5 minutes or until they are crisp and slightly brown.

Recipe variations

Consider the pita chip your blank canvas. I used the seasonings that I like, but you can definitely get creative! Some other great options that I like are listed here:

  • Za’atar
  • Cumin and ground coriander
  • Nutritional Yeast (for a cheesy flavour)
  • Popcorn seasonings
  • Curry powder
  • Smoked paprika and chili powder

I use white pita bread to make these easy homemade pita chips but you can definitely use whole wheat or even whole grain pita bread if you prefer.

Helpful hints

Bake them low!

Experiment with your oven, but for us a temperature of 325 degrees Fahrenheit works well to crisp up these pita chips without burning them. Do not use a very high heat as this will cause your pita chips to burn. Better a lower temperature for a longer time than a higher temperature that risks burning your pita chips.

Try to keep your pita chips almost the same size

You can cut your pita chips any way you like. I prefer wedges. The key is to make sure that they are all pretty similar in size so that they cook and crisp up evenly.

Don’t split your pita

Some recipes may call for splitting your pita in half (basically so that you end up with two rounds, and no pocket). This makes for a very thin pita chip. I prefer to keep my pita double-layered. The pita chips are more substantial this way and hold up better to scooping into some amazing dips and spreads .

How to serve

I can honestly eat these pita chips just as they are; they are a great and healthier (I think!) alternative to fried potato chips!

They are also excellent as a vehicle for dips and spreads. Serve them with any of these traditional Greek dips and spreads like Tzatziki or Eggplant dip (melitzanosalata). They also go well with a baked feta dish like this Baked feta with honey or with Baked Greek feta with figs. The options are really endless!

Another great way to serve these easy homemade pita chips is to serve them with soup like this Cream of tomato soup or Easy pumpkin soup. I also like to crumble them and use them as croutons in salads like the classic Maroulosalata (Greek lettuce salad) or any of the other traditional Greek salads.

Frequently asked questions

Can I use homemade pita bread to make these easy pita chips?

Not really. Homemade pita bread is amazing (and easy to make) and I love to serve it with Pork souvlaki or Greek Chicken Gyros. But, what makes homemade pita bread so amazing (soft and fluffy) makes it not appropriate for pita chips. Store bought, thin pita is best here.

Can I make pita chips in my air fryer?

You can! I have done this and it works out great. I would keep the same temperature as is called for in the recipe (325 degrees Fahrenheit) and just keep an eye on them. Shake up the air fryer basket after about 5 minutes, and see how they are progressing. You may need to cut the total cooking time a bit (less than 10 minutes).

Storing

When you pita chips have cooled completely store them in a plastic bag or container to keep them crisp. Even a paper bag will do. Make sure that there is no humidity in there (hence why you need to make sure they are completely cooled) so that they don’t end up getting soggy.

Pita chips will keep well for up to a week (although honestly, they won’t last that long).
