Preheat oven to 350 °F
Grease the bottom and sides of your pie plate with some butter.
Wash and dry your peaches. Cut 8 medium peaches into wedges that are about ½ inch thick.

In a bowl, or directly in your pie plate, toss together the peaches, 3 tbsp brown sugar½ tsp cinnamon, ¼ tsp ground ginger and 3 tbsp cornstarch. If you used a bowl, transfer peaches to your pie plate.

In a medium sized bowl, combine the ½ cup melted butter, 1 cup all-purpose flour, ¼ cup brown sugar, ¼ cup white sugar and ½ tsp salt. Mix well until combined. If your mixture appears too dry, you can add a bit of water, or some additional melted butter.

Spread the topping over the peaches. It does not need to be perfectly even.
In a small bowl combine ½ tsp cinnamon and1 tbsp white sugar and sprinkle it over the top.

Bake in the middle rack of your oven for approximately 30 minutes, until peaches are bubbling and the top of your cobbler is a golden brown.
Allow to cool for 10 to 15 minutes before serving.
