Easy tomato and cucumber Greek salad

Ingredients

  • 4 tomatoes, medium
  • 2 small Lebanese cucumbers or 1 large English cucumber
  • ¼ cup slivered red onion

For the dressing

  • ¼ cup olive oil
  • 2 tbsp red wine vinegar
  • ½ tsp dry Greek oregano
  • ½ tsp salt

Instructions

  • Wash your tomatoes and your cucumber. Cut your tomato into wedges and your cucumber into rounds or half rounds. Cut your red onion into slivers. Combine everything in a bowl or a shallow dish.
    4 tomatoes, medium, 2 small Lebanese cucumbers, ¼ cup slivered red onion
  • Pour your olive oil and vinegar into the bowl. Season with the oregano and salt and toss everything well to combine. Serve and enjoy!
