Chamomile and basil iced tea (Κρύο τσάι από χαμομήλι και βασιλικός)

Greek chamomile tea made with basil and sweetened with honey, served over ice.

Equipment

  • French press, optional
  • Fine sieve, optional

Ingredients

  • 3 1/2 cups boiling water
  • 1/4 cup loose chamomile tea or 3 chamomile tea bags
  • 5 - 6 fresh basil leaves
  • 1 - 2 tbsp honey
  • ice, to serve
  • basil, to garnish optional

Instructions

  • Place your tea and basil in a french press or other heat resistant container, ideally one which also has a cover.
  • Pour the boiling water over your chamomile tea and basil and stir gently. Do so carefully so that you don't break apart and bruise your basil leaves.
  • Allow for your tea to steep until the water has cooled significantly. Add the honey and stir until it dissolves. Cover your container. If using a french press, press down so that the tea and basil leaves remain at the bottom of your container. If you are using a different type of container, pour the tea through a sieve to remove the chamomile tea and the basil leaves. Then, return your tea to your original container and cover. (If you are using tea bags simply remove them and the basil leaves using a spoon or a fork). Cover your container.
  • Refrigerate your tea for several hours until cold. To serve, pour over ice and garnish with fresh basil leaves if desired.
