Isli – Greek Christmas Cookies Stuffed with Walnuts

These cookies originated in Asia Minor and have been around for a very long time. They are traditional Christmas cookies that are stuffed with crushed walnuts and then soaked in a honey syrup.

Combine all syrup ingredients in a small pot. Boil for 7 – 10 minutes. Set aside to cool.

Step 1

Combine all ingredients for the filling, in a bowl and mix together with a fork. Set aside.

Step 2

In the bowl combine the olive oil, orange juice, sugar and orange zest and mix well.

Step 3

In another bowl whisk dry ingredients. Add the dry ingredients to the wet ingredients and mix until just combined.

Step 4

Take dough and flatten it in the palm of your hand. Press it out into a thin circle. Place filling in the center and seal.

Step 5

Place them on a parchment lined baking sheet. Use a fork to make indentations all over the top surface of the isli.

Step 6

Bake for 20 – 25 minutes or until golden brown.

Step 7

Removed from the oven. While still hot, transfer them to the pot with the syrup and soak for about 1 minute.

Step 8

- Traditionally isli are shaped into small triangles, almost like Christmas trees. - Isli can be kept at room temperature in a covered container for up to a week, at least.
