Oven baked cheese crisps made with Greek kefalotyri

Equipment

  • Box grater or other cheese grater
  • 1 Baking tray
  • 1 Parchment paper

Ingredients

  • 1 cup grated kefalotyri cheese
  • fresh cracked black pepper, to taste

Instructions

  • Preheat oven to 325 degrees Fahrenheit.
  • Line baking tray with parchment paper.
  • Divide your grated kefalotyri cheese into 8 portions, (each portion approximately 2 tablespoons of cheese).
    1 cup grated kefalotyri cheese
  • Transfer portions of cheese onto baking tray and create circular crisps that are flat and even (you don't want a mound of cheese). We like to use an upside down glass or the ring from a mason jar to help shape the cheese round.
  • Top with freshly cracked black pepper to taste, and bake in the middle rack of your oven for about 15 minutes.
  • Your crisps are done when they are a golden brown. You may notice that the center of your crisp is not as golden as the edges - this is fine.
  • Allow to cool for a minute on the baking tray and then transfer carefully (use a spatula) to a cooling rack.
  • Enjoy!
