Oven baked cheese crisps made with Greek kefalotyri

Equipment
Box grater or other cheese grater
1 Baking tray
1 Parchment paper
Ingredients
1cupgrated kefalotyri cheese
fresh cracked black pepper, to taste
Instructions
Preheat oven to 325 degrees Fahrenheit.
Line baking tray with parchment paper.
Divide your grated kefalotyri cheese into 8 portions, (each portion approximately 2 tablespoons of cheese).
1 cup grated kefalotyri cheese
Transfer portions of cheese onto baking tray and create circular crisps that are flat and even (you don't want a mound of cheese). We like to use an upside down glass or the ring from a mason jar to help shape the cheese round.
Top with freshly cracked black pepper to taste, and bake in the middle rack of your oven for about 15 minutes.
Your crisps are done when they are a golden brown. You may notice that the center of your crisp is not as golden as the edges - this is fine.
Allow to cool for a minute on the baking tray and then transfer carefully (use a spatula) to a cooling rack.
