Cactus pear, orange and Metaxa cocktail
A refreshing drink made with pureed castus pear, freshly squeezed orange juice and Greek cognac

- 2 cactus pears
- 1 cup orange juice
- 4 tbsp Metaxa or other fine cognac
- 2 sprigs rosemary
- ice
Peel your cactus pears, (watch video here) and chop each fruit into chunks. Place in a blender and puree until smooth. Pass the pureed cactus pear through a fine mesh sieve set over a large measuring cup or bowl. Stir the liquid around with a spoon until all that remains are the seeds (that liquid will have pass through into the measuring cup or bowl).
Place 2 - 3 ice cubes in each of two tumbler glasses.
To each glass add 4 tablespoons of the cactus pear juice. Then add 2 tablespoons of Metaxa to each glass. Top each glass with 1/2 cup orange juice.
Serve with the sprig of rosemary in the glass, which not only adds flavour to the drink, but can also be used as a stir stick.

If you would like your drink more alcoholic, or less, simply adjust the amount of Metaxa you add.
