apples, peeled, cored and grated

Instructions
Preheat your oven to
350
°F
Line your muffin tray with liners and set aside.
Combine all ingredients in a blender or food processor. Blend until combined and the batter is smooth. Be sure that the dates have been well blended.
2 cups large flake oats,
2 apples, peeled, cored and grated,
8 Medjool dates, pitted,
⅓ cup olive oil,
¼ cup maple syrup,
2 tbsp ground flaxseed,
5 tbsp water,
1 tsp baking soda,
1 tsp ground cinnamon,
½ tsp salt,
½ tsp vanilla extract
Divide evenly among the 12 muffin cups. Bake in the middle rack of your oven for 15 - 17 minutes.
Allow to cool for 10 minutes before removing from the baking tray. Enjoy!
Notes
We like to store these easy vegan apple oatmeal muffins in the refrigerator. They will keep well for a week.
