Tomato and feta toast

Ingredients

  • 2 slices thick country bread cut into 1 inch thick slices
  • 1 tbsp olive oil
  • 1 medium size tomato sliced into rounds
  • 2 - 4 pieces feta
  • 1/2 teaspoon dried Greek oregano

Instructions

  • If time permits, and if this is your preference, toast your 2 slices thick country bread.  This is optional, as un-toasted bread will be just as delicious.

  • Drizzle your bread with 1 tbsp olive oil.  Top with slices of tomato.  Top the tomato with slabs of feta.  Top that with some dried Greek oregano and some more olive oil.
    1 tbsp olive oil, 1 medium size tomato, 2 - 4 pieces feta, 1/2 teaspoon dried Greek oregano
  • Enjoy!

Notes

Add as much or as little feta as you like for each tomato and feta toast.  I like to add 2 rectangular sized pieces per slice.
