Lamb sandwich
A delicious Greek lamb sandwich full of Mediterranean flavours

- 1 6 inch baguette, sliced in half lengthwise
- 4-6 slices cooked lamb
- 1 tbsp tzatziki
- 2 - 3 tomato slices
- 4 - 6 slivers of red onion
- 1/4 cup crumbled feta
- 2 jarred pepperoncini peppers, sliced into rounds
- 2/3 cup arugula
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1/4 tsp dry oregano
In a small bowl combine the olive oil, lemon juice, and oregano and then combine this mixture with the arugula. Toss to combine well.
Warm up the lamb in the oven or the microwave, being careful not to over heat it (you don't want it to dry out).
Begin to assemble your sandwich. We do it in the following manner:Spread the tzatziki onto one of the baguette slices. Top with the lamb, then add the tomato, red onion, crumbled feta, pepperoncini peppers and the arugula salad. Enjoy!
