Greek marinated chicken thighs

Ingredients

  • 12 Chicken thighs skinless and boneless
  • 1 cup (250 mL) Greek yogourt
  • 1 tbsp (15 mL) lemon juice juice from half a lemon
  • 1/3 cup (80 mL) olive oil
  • 1 tbsp minced garlic
  • 2 tsps paprika
  • 2 tsps dried oregano
  • 1 tsp salt
  • 1/4 tsp pepper

Instructions

  • In a medium sized bowl combine the yogourt, lemon juice, olive oil, garlic, paprika, oregano, salt and pepper. Mix well to combine and then add the chicken thighs, tossing to coat.
  • Cover your bowl and place in the refrigerator for at least 1 hour.
  • Preheat your outdoor grill to medium heat (350-400 degrees F)
  • Remove the chicken thighs from the marinade and place them on the grill, over the direct heat.
  • Depending how thick the chicken thighs are, it should take 4-5 minutes per side. The internal temperature of your chicken should reach 170 degrees F.
  • Let rest 5 minutes before serving, and enjoy!

Notes

You can always substitute bone-in chicken thighs, but keep in mind that the grilling time, will be longer.  
Do not re-use leftover marinade.  Discard after you remove the chicken pieces.
You can always make these chicken thighs indoors by cooking them on a stove top grill pan; cooking times may vary.
