Vasilopita (or Basilopita) is a perfectly sweet and flavourful New Year’s Cake! This cake is full of meaning, and is baked with a coin hidden inside of it.

Mix dry ingredients. Mix butter and sugar and wet ingredients. Slowly mix wet and dry ingredients. Line a pan with parchment paper.

Step 1

Take a silver coin and wash well.  Dry the coin and then wrap it in securely in food grade plastic wrap. Set aside.

Step 2

Spread the batter into the pan.  Slowly slip the coin in the batter. Smooth the top.

Step 3

Bake for 60-70 minutes. Cool in the pan for 5 minutes. Remove from pan. Sprinkle the top with some icing sugar, and serve.

Step 4

- If you prefer to keep your vasilopita alcohol free, use orange juice instead. - If you are serving vasilopita to the very young or the very elderly, be careful as it is a choking hazard.
