Combine all dressing ingredients in a jar with a lid or a bowl. Set aside.

Step 1

Combine the butternut squash with the olive oil, salt and pepper and toss. Spread the on a baking pan. Roast in the middle rack of your oven for 30 minutes.

Step 2

Add remaining ingredients and toss with the dressing. Add the squash and cooked couscous and more dressing. Toss to combine.

Step 3

- You can combine the squash and the couscous even while they are still warm. - This salad keeps well in the fridge for 3-4 days.
