Sheet Pan Spanakopita Quesadilla

Anyone who thinks that they don’t like spinach has never had it mixed with feta and ricotta, the combination of which is then wrapped and baked or fried into a crispy package.

Key Ingredients

flour tortillas

baby spinach

Place tortillas around the edges of the baking tray with the half hanging over the side. Place another tortilla in the center.

Step 1

Saute spices. Add in spinach and cook until wilted down. Drain the spinach then chop.

Mix the spinach with the remaining ingredients. Place mixture on the tortillas arranged on the baking tray.

Fold over the tortillas to cover your spinach mixture.

Step 4

Brush the top with a bit of olive oil and cover the top with a sheet of parchment paper.

Step 5

Bake for 20-25 minutes. Cool. Cut into sizes of your choice

- The best way to re-heat leftover sheet pan spanakopita quesadilla is either in the oven or on a non-stick skillet. - Immediately after removing the quesadilla from the oven, transfer it to a cooling rack.
