Place the pork loin in the center of your roasting pan. Pierce the skin and insert the garlic slivers. Season the pork.

Step 1

Prepare the carrots and potatoes. Season with the spices and seasonings. Mix well to coat all the vegetables.

Step 2

Arrange the potatoes, carrots and juices carefully around the pork in the pan. Pour the olive oil and vegetable oil into the pan.

Step 3

Cover and bake for around 55 minutes. Once ready, carefully remove it and place it on a cutting board. Allow the pork to rest.

Step 4

Drizzle with honey dijon gravy. Serve and enjoy.
