Paximadia or Paximathia, Greek Biscotti

Paximadia (Paximathia) are twice baked Greek cookies that are very similar to the Italian biscotti. They are a firm dunking cookie but they can also easily be eaten on their own.

Beat sugar and oil. Add milk and eggs, and beat. Add mixed nuts and mix. Add combined baking powder and cinnamon with flour.

Step 1

Slowly add the rest of the flour. In a bowl, add oil. Add the dough and knead. Form the dough into logs.

Step 2

Place on baking tray. Lightly score the dough horizontally.

Step 3

Bake for 25-30 minutes. Remove from oven, cut the dough all the way through. Broil for 1-2 minutes per side.

Step 4

- If you want softer paximadia bake them for less than the recommended time. - Paximadia will keep for several weeks stored in an airtight container at room temperature.
