Melomakarona Cake with Chocolate

This cake has all the amazing flavours of melomakarona, but in cake form. It has the added amazing flavour of chocolate, which matches the spices, honey and walnut flavour of the cookie so well!

In a small bowl whisk together the dry ingredients. Set aside. In the bowl of your stand mixer combine all of the ingredients, and mix.

Step 1

Pour batter into a greased springform pan and bake for 45 minutes.

Step 2

Prepare your syrup. Combine honey and bring to a boil. Simmer until the honey has a very liquid consistency.

Step 3

Remove cake from oven and poke holes all over.

Step 4

Carefully pour the honey syrup over the cake. Allow to cool.

Step 5

Chop up the chocolate and transfer to a heat proof bowl.

Step 6

Boil coconut mild and pour over the chocolate. Allow to sit for a minutes and then whisk. Add orange extract and salt and mix.

Step 7

Pour the chocolate over the cake and spread evenly. Garnish the cake. Refrigerate for 2 hours or overnight.

Step 8

For candied walnuts as garnish, toast the walnuts until fragrant. Add honey and mix with nuts. Spread in parchment paper and cool.

Step 9

Decorate your cake as you like with the candied orange slices and the honeyed walnuts.

Step 10

- The cake will keep well at room temperature for several days, and longer in the refrigerator. - If you prefer to keep this dessert alcohol free, use more orange juice instead of the cognac or brandy.
