Ladenia Greek Flatbread

We are so happy to introduce you to what is probably one of our favourite summer meals. Ladenia is a recipe that brings us way, way back, and very far away.

In a bowl, combine warm water, yeast and sugar. Let stand for a few minutes. Add the flour, olive oil, and salt. Mix on low speed until the dough is smooth.

Step 1

Remove the dough from the bowl and shape it into a ball. Transfer to a bowl that brushed with olive oil. Cover the dough with plastic wrap and put in a warm place.

Step 2

In a bowl, combine your onions, the tomatoes, olive oil, and spices. Stir carefully to combine.

Step 3

Stretch the dough into a rectangle on the bottom of the pan. Let it rise. Spread all the vegetables over the dough in the baking pan.

Step 4

Bake for 40-45 minutes. Remove from the oven, and cool. Transfer it to a wire rack to allow it to cool for another few minutes.

Step 5

- A bit of salt in dough is needed to bring out the flavours in your ladenia. - Lukewarm water is what you need to help activate the yeast, not too hot, and not cold.
