Kourabiethes

Kourabiethes (kourabiedes) are a delicious Greek cookie.  Flavoured with almonds and coated in icing sugar, these cookies have a tendency to stick to the roof of your mouth.

all-purpose flour

In a bowl, sift dry ingredients. Set aside. Toast chopped almonds in pan.

Step 1

In the bowl, mix well the shortening, olive oil, melted butter and icing sugar. Add the other ingredients. Mix well.

Step 2

Refrigerate for 2-3 hours. Shape your kourabiethes. Refrigerate for 10 minutes. Bake for 12-14 minutes.

Step 3

Remove from oven. Brush some rose water on the cookies. Transfer to the cooling rack.

Step 4

Liberally sift icing sugar over the cookies so that they are completely covered.

Step 5

- If you cannot find vanilla powder, then you can use vanilla extract instead. - Kourabiethes will keep for several weeks in the refrigerator.
