Easy Pan Fried Pork Medallions

Talk about fast food! Although there is a bit of planning and prep work that needs to be done for the recipe, the actual cooking is a breeze!

Place your sliced pork medallions into a bowl and toss with salt, Montreal steak spice, oregano and pepper. Next add the oil and mix well.

Step 1

Place a large colander over a bowl and drain your pork while reserving the marinade. Allow to drain for 15 minutes at room temperature.

Step 2

Using a meat tenderizer or mallet flatten your pork medallions until they are about 1/4 inch thick.

Step 3

Heat 1/4 inch of vegetable oil in a large skillet and fry the pork medallions in batches being careful not to overcrowd the pan.

Step 4

- Serve your pork medallions with a side of French fries and some lemon wedges. Enjoy! - Fry for about 1 ½ to 2 minutes per side.
