Crustless Greek Zucchini Tart

This tart makes an incredible light lunch or dinner. We like to serve it with maroulosalata (Greek lettuce salad) on the side. It would be equally delicious with a nice horiatiki.

Key Ingredients

zucchini

Wash and dry zucchini and then grate them with the skin on. Set in a colander, add salt, and set aside to drain.

Step 1

Heat olive oil in a pan. Saute onion and garlic. Add the drained zucchini  and cook for around 3 minutes. Add the herbs. Allow to cool.

Step 2

Mix the dry ingredients a bowl. Add the zucchini mixture into the bowl with the dry ingredients and then add the eggs and cheeses.

Step 3

Pour the batter in a greased baking pan. Sprinkle cheeses on top of the mixture. Bake for 50-55 minutes. Cool and serve.

Step 4

- If there are any leftovers, we would suggest removing the pieces from the baking pan. - Place any leftovers in the fridge for 3-4 days.
