Greek noodles and chicken prepared in a delicious tomato sauce
Have you ever had square pasta? Like small little squares of egg noodles that are delicate and full of flavour? If you’re Greek, or have ever visited a Greek home, we think that the answer might be (should be) Yes!
Hilopites are the small, square-shaped egg noodles that we grew up with. In fact, we have very vivid memories of our parents gathering with aunts and uncles and dear friends, spending the day making hilopites from scratch. Flour, water (or was it milk?), salt, eggs all worked together and transformed to make long strips of noodles that were then cut by hand into perfectly imperfect squares.
A deliciously quick and simple way to enjoy the flavours of spanakopita
Ask any non-Greek, or Greek, what one of their favourite Greek foods is and you will often hear spanakopita. There’s a very good reason for that! Spanakopita, in all of its variations, is a delicious treat; perfect as a meze and at the same time substantial enough for a light meal. The problem (if you are trying hard to find one) is that spanakopita is encased in phyllo, which you may not have on hand (if you are opting for the store bought variety) or which you may not have time to make (if you are going for the do-it-yourself variety). Alas, every problem has a solution, and in this case the solution is pasta.
We sure love simple, and when simple is simply delicious, well…we love it even more. When things get busy, hectic, and overwhelming, knowing that there is a way to get a meal on the table in short order, using a few ingredients you likely already have on hand, is a gift. This gift is often wrapped in pasta.
There is probably nothing more satisfying than a nice bowl of pasta, or comfort carbs as we like to call them. Not only are they versatile, but they are usually inexpensive, and readily available. Here we’re sharing a lovely recipe for spaghetti (one of our top 5 noodles) topped with a rich, but simple tomato sauce and handfuls of crumbled feta. This might become your go-to meal when you are pressed for time, but it’s so delicious that you may find yourself making it even when you have the entire day to spend in the kitchen. It’s simply that good.
