Thighs. For many of us, the mention of thighs immediately causes us to think of swimwear shop changing rooms, gaps that are unattainable and hot wax followed by searing pain. Well, we’re here to redirect your attention, because some thighs are better than others.
Chicken thighs are a good and generally accessible source of lean protein; although they do have more calories and fat than white chicken meat, they tend to be more tender and flavourful. Still, because of the caloric and fat content, you may not want to be eating chicken thighs every day. So, when you do decide to enjoy them, a great recipe is important. Simple ingredients slow-cooked to create the perfect Greek comfort food
There is a whole world of Greek food called kokkinista (κοκκινιστά), and we love them all. The term kokkinista means reddened, and the concept behind these dishes is simple; take a protein or vegetable, cook it slowly in a rich tomato sauce, serve it over something that can help sop up this lovely sauce, and realize that great food does not need to be fancy or complicated.
A pot of goodness that will satisfy your whole family
This may actually be one of our favourite meals. Not only does this dish of chicken, cooked alongside potatoes and peas in a rich tomato sauce satisfy all sorts of comfort cravings, it also comes together pretty easily. Nothing too fancy in terms of technique or ingredients, this is humble, real Greek food. This is the type of meal we grew up on, and this is the type of meal that we turn to today, when we want something that tastes like home.
The Cobbopoulos; a delicious, Greek-inspired, Cobb salad
This salad is satisfying in so many ways. First, it delivers in flavour, with simple and fresh ingredients that come together in a delicious way. Second, it manages to put a Greek spin on a classic salad making it, in our opinion at least, even better; feta and Kalamata olives tend to do that. Finally, the presentation speaks to each of us, at different moments. The initial plating, ordered and with each ingredient clearly in its place, satisfies the need for organization that one of us has. When the salad gets tossed together to coat every little bit with the delicious dressing…well that’s organized chaos in a bowl, and hits home with the other one of us.
Boiling then broiling gives the most delectable chicken!
Some things in life make no logical sense, and yet still seem to work. This recipe is an example of that. Reading through the directions which follow you would assume that the chicken, which is boiled twice and then broiled, would end up over-cooked and dry; certainly not something worth writing about. But, you would be wrong. Despite the somewhat unusual cooking method and minimal seasoning, you end up with a meal which is delicious, tender and definitely worth posting about.
Meat or poultry cooked in tomato sauce is a staple in most Greek kitchens, including our parents’. This type of meal is called kokkinisto, which means red or reddened and refers to the fact that the cooking liquid is tomato sauce. Whether you choose to use meat, as we did in our veal kokkinisto recipe, or poultry as we are doing here, you will find that this method of cooking results in something absolutely delicious, with minimal effort. How wonderful is that!?
