What to do with left over Greek Easter bread, tsoureki! It can be used in some creative and delicious ways
There are a few things about Orthodox Easter and Greek families that are pretty standard fare. Daily church services (sometimes more than one a day), beautiful red dyed Easter eggs, and other creative designs, and lamb to help break the fast of Great Lent. Holy Thursday for us is usually the day when we try to finish up all of our last minute baking – Pascha is not Pascha without koulourakia, amygdalota and galatopita. It’s also not Pascha without the sweet smell of tsourekia baking. In this post you will discover what to do with your leftover tsoureki.
Galatopita (or galopita) is a Greek milk custard pie made without phyllo or crust
Γαλατόπιτα. Galatopita (sometimes called galopita) is a traditional Greek milk custard pie that is popular in the Peloponnese region of Greece, made especially during Easter. There are several variations, including those with phyllo and those without. If you have ever tasted a great galatopita you would remember its richness, sweetness and unique texture. You may also remember sneaking a few extra pieces after your initial one, how the kitchen smells when it’s baking, and how amazing it tastes right out of the fridge. Galatopita reminds us of all these things, but most of all it reminds us of Helen’s godmother.
An incredible melomakarona ice cream cake with chocolate fudge and whipped cream topping.
We can barely contain our excitement! It was during one of our recent phone conversations, which tend to cover everything from what we’re watching on Netflix to why we are wired to love bread as much as we do, that we came up with the idea for a melomakarona ice cream cake. This recipe came to us as we were talking about our melomakarona cheesecake, and we were wondering if we could ever create another dessert to rival that one! We were so excited by the possibility of this ice cream cake that the next day we baked up a huge batch of frozen tyropitakia to make space in our freezer, bought the ice cream, and set to recipe developing.
Unconventional vasilopita for an unconventional year
Purists and traditionalists may cringe at this post, and we’re prepared for the fall out. We know that there are certain things that are sacred and should not be tampered with. Like garlic in tzatziki or bechamel on pastitsio. We get it, we really do!
But let’s face it guys, 2020 has been a very unusual and unconventional year and 2021 is starting off that way as well. In our part of the world we are in the midst of the second wave of the COVID-19 pandemic and the implications are huge. Restaurants remain closed except for take-out, retail shops are now closed, schools are either closed or via distance learning, and gatherings of any kind are prohibited. For those who prefer to ring in the new year in the comfort of their bed, sleeping, this is great! For many others, this sucks – big time!
Christopsomo is a layered Christmas bread with the most unbelievable texture and flavour
Christmas rituals certainly vary across cultures, regions and families. Some are embedded within religious traditions while others are developed through years of “that’s just the way we do things”. One tradition which our family shares with many other Orthodox families is the baking of the traditional christopsomo, which literally translates to Christ’s bread. This bread is typically baked on Christmas Eve and eaten on Christmas Day and is replete with symbolism and meaning.
Much of the beauty of Greek cuisine is that it varies from region to region. In part this is due to agricultural possibilities (think mountainous landscapes versus islands surrounded by the sea), connections with other cultures, and local customs and traditions. Every recipe tells a story, and offers a glimpse into the rich web of history, both cultural and culinary, that makes Greece and Greek food such an important and fascinating area of study. Although many of these unique regional dishes are well known (think kalitsounia from Crete or lalagia from Messinia), others are so local that they are known only to isolated villages. The recipe which we are sharing here is one such example.
Tsoureki and feta grilled cheese is a sweet, salty, crunchy and oozy grilled cheese sandwich that you’ll love!
For years, when we thought about grilled cheese we thought only about two pieces of white toast slathered with butter, with a slice of processed cheese in between them. This would get fried in a non-stick pan and would usually be served with a cold glass of milk. A thin, crispy but at the same time kind of soggy, sandwich…and we loved it. It was one of the first things we learned to make ourselves when we were young, and we felt that we were teaching our parents a thing or two…grilled cheese was not something they grew up on. Now that we are older, and more culinary (we have a blog after all!), we still occasionally enjoy this classic…but we’ve also learned that there is more than one way to grill a cheese sandwich. The result? The original Mia Kouppa tsoureki and feta grilled cheese!
Koulourakia with orange are a Greek vegan cookie, perfect for dunking!
Our parents make so many types of koulourakia (Greek for cookies that are great for dunking into coffee or milk) that it is almost hard to keep track of them all. To help differentiate one koulouraki from the other, they often refer to a key ingredient. So here, we present to you koulourakia with orange…because, you guessed it, they contain a fair bit of orange juice. They also often refer to different koulourakia by the person who prefers them over all others. So these, along with being koulourakia with orange, are also affectionately referred to as “Georgia’s favourite”.

Lagana is the traditional Greek flatbread, perfect for lent.
This is probably one of our favourite times of year. In Greece, carnival season is ending and Monday marks the beginning of lent for Greek Orthodox Easter (Pascha). Although we live in Canada, and there are no such Carnivals, we do what we can to keep with some of the Greek traditions and customs. Many people have abstained from eating meat this past week and will now continue to abstain from meat, eggs and dairy until Easter Sunday. Whether you are fasting entirely, partially, or not at all, is of course a personal decision. Throughout our lives, for various reasons, we have fasted in the ways which were most appropriate for us at the time. One thing that has always remained constant however is that on Kathara Deftera (Clean Monday), we eat lagana.
