Greeks love to have fun with cheese. We love to fry it, bake it and use it to top almost anything. Of course, we also like to serve it just as it is, and no party table is complete without at least one variety of delicious cheese, like feta, halloumi and kefalotyri. With such delicious Greek cheeses at our disposal, it is easy to understand the cheese obsession.

In terms of snacking, not much beats cheese and crackers, except maybe potato chips! We both adore chips, their crispy nature, crunchy texture, amazing flavour! Cheese flavoured chips are particular favourites, but we know that too much of a good thing is sometimes not so good for you.

Searching for something cheesy, crispy and crunchy, we decided to try making cheese crisps at home. You can certainly buy cheese crisps in the grocery store or online, but these are never made with the Greek cheeses we love (as far as we know)! What are two Greek cheese loving foodies to do? Why, make their own kefalotyri cheese crisps of course! These cheese crisps are so easy, so delicious and so much fun to make (and eat). We do need to issue a warning however, you will quickly become addicted to them!

What is kefalotyri cheese?

Kefalotyri is a cheese from Greece or Cyprus and is made with either goat or sheep milk, or sometimes a combination of both. This is a hard, sharp cheese with a beautiful rich aroma. Its flavour can be described as somewhat spicy, tangy, sharp and salty; it is not a cheese for those who like very mild cheese tastes.

What are the best substitutes for kefalotyri cheese?

If you can’t find kefalotyri cheese you can try making cheese crisps with pecorino cheese, halloumi, romano, parmesan or graviera cheese. Of course, you can make cheese crisps with something like cheddar too! In fact, any hard cheese should work – just watch the cooking time to make sure you don’t burn them.

What is the best way to serve kefalotyri cheese crisps?

We love to snack on the kefalotyri cheese crisps just as they are, but there are also more creative ways to enjoy them. Break them up and add them to soups, like our cream of tomato soup, or to salads like our kale, quinoa and apple salad. They are also great in lieu of pita chips – dip them in hummus or guacamole or our melitzanosalata. You can also use them as a base for bruschetta; if you choose to do this, assemble the bruschetta just before serving. You can also use them to scoop up your bruschetta topping, or even some jarred salsa. Delicious any way you eat them!

Kefalotyri cheese crisps

Ingredients

  • 1 cup grated kefalotyri cheese
  • fresh cracked black pepper, to taste

Instructions

  • Preheat oven to 325 degrees Fahrenheit.
  • Line baking tray with parchment paper.
  • Divide your grated kefalotyri cheese into 8 portions, (each portion approximately 2 tablespoons of cheese).
    1 cup grated kefalotyri cheese
  • Transfer portions of cheese onto baking tray and create circular crisps that are flat and even (you don't want a mound of cheese). We like to use an upside down glass or the ring from a mason jar to help shape the cheese round.
  • Top with freshly cracked black pepper to taste, and bake in the middle rack of your oven for about 15 minutes.
  • Your crisps are done when they are a golden brown. You may notice that the center of your crisp is not as golden as the edges - this is fine.
  • Allow to cool for a minute on the baking tray and then transfer carefully (use a spatula) to a cooling rack.
  • Enjoy!
