We’re only a few days into January and we’re already exhausted by the fact that we’ve got so much riding on this year. In addition to all our work, blog, and family goals, we have our own personal goals too. We join the masses who, when the clock chimes midnight, commit to healthier living. We’re not unhealthy in general. We don’t smoke, we don’t drink excessively, we don’t eat dessert every day…but we know we can do better. Maybe we could take the stairs instead of the elevator. Maybe, when we finally get into bed, we can go to sleep instead of scrolling through Instagram. Maybe when we eat koulourakia, we can stop at two instead of seven. Or maybe, if we eat more salad, we don’t have to do any of that!

Salads are a wonderful thing. There are so many ways to make hearty, filling and delicious salad that it’s pretty easy to have salad everyday and never get bored. You can even have the same salad with different dressings and keep things interesting that way. For us, a great salad is one that has many textures, that is full of different flavour and that is easy to put together. If it can be mostly assembled the day before to make for an easy pack along lunch, all the better.

This red cabbage salad with apple is perfect in so many ways. The flavour is fantastic and every bite is a combination of crunchy, chewy, and nutty. An added bonus, cabbage is still a very reasonably priced vegetable (at least where we are). This is so important, especially these days with the price of groceries on the rise. Any way we can save money without scrimping on nutrition and flavour is a bonus!


What is the easiest way to chop or shred cabbage?

You can certainly use a sharp knife to chop or shred your cabbage, and this is the way we prepared it for years. But we recently discovered another way! Chop your cabbage into chunks, and use a mandoline slicer to shred it easily! Just be sure to use the finger guard because mandoline slicers can be a little dangerous! What apple should be used in this salad?

Any variety apple would work well; use an apple you like! Don’t peel the apple as the skin will provide extra nutrition, and colour!

Can I prepare the red cabbage and apple salad ahead of time?

Yes! Actually, this salad tastes even better if allowed to sit for a while. Rest assured then that you can make your salad a few hours before serving it. Refrigerate any unused portions to be enjoyed the next day!

Equipment

  • Mandoline slicer, optional
  • Grater

Ingredients

For the salad dressing

  • 3 tbsp (45 mL) vegetable oil, or other mild flavoured oil
  • 1 tbsp (15 mL) lime juice
  • 1 tbsp (15 mL) white wine vinegar
  • 1 tsp fresh ginger, minced
  • 1 tsp dijon mustard
  • 2 tsp maple syrup, or honey

For the salad

  • 8 cups (680 grams) red cabbage, thinly sliced by hand or with a mandoline slicer
  • 2 tbsp (30 mL) white wine vinegar
  • ½ tsp salt
  • ½ tsp sugar
  • 1 apple, washed and thinly sliced
  • 1 carrot, peeled and finely grated
  • ½ cup (20 grams) fresh parsley, chopped
  • ¾ cup dried cranberries
  • cup chopped walnuts, toasted See Recipe Note

Instructions

For the salad dressing

  • Combine all of the ingredients in a jar with a lid and shake until well combined. Alternatively, whisk to combine. Set aside.

For the salad

  • In a large bowl combine the cabbage, vinegar, salt and sugar. Toss to combine and let sit for 5-10 minutes.
  • Add the sliced apple, grated carrots, chopped parsley, dried cranberries and toasted walnuts. Add the dressing, and toss to coat.
  • Serve with additional cranberries sprinkled on top, if desired.
  • Enjoy!

Notes

Toast walnuts by placing them in a non-stick skillet over medium heat for a few minutes.  Stir constantly with a wooden spoon and remove from heat once you smell a nutty aroma.
