A delicious Greek lamb sandwich full of Mediterranean flavours

Most years Pascha is a huge celebration in our family.  Immediate family, extended family, friends who are like family gather together to eat, drink, laugh and be merry.  Many people means much food and you can read all about our usual Easter celebrations over here.  This year, like last, our plans were usurped by the pandemic and each of us celebrated at our own homes, with our husbands and daughters.  Different, but still lovely.  As a result, our usual entire lamb on a souvla was replaced by a leg of lamb and a couple of shanks on the smoker at one of our homes, and grilled lamb chops at the others.

Regardless of the fact that we delivered food to our parents, we were still faced with lamb leftovers.  We’re also assuming that others may be in the same situation.  This year we decided to combine our leftovers with other leftovers, like tzatziki, the ladolemono we had used to pour over our grilled loukaniko (Greek sausages that we used as meze), feta cheese and other niceties to make a substantive and absolutely delicious lamb sandwich.

Can I use any cut of lamb for this sandwich?

So long as you can slice your lamb in order to have it be conducive to a sandwich, go for it. You can use any lamb shoulder you may have leftover from making our roast lamb with potatoes. You can even cut up lamb chops if that is what you have handy. Just be sure that there are no bones! This sandwich is not just for leftovers however. It is so good that you may want to cook up a bit of lamb expressly to make this sandwich. It is hearty enough for dinner, perhaps served with a side of French fries and also makes a great take along lunch.

What kind of baguette is best for this lamb sandwich?

Really, any kind. The only thing that we would advise is that you get a baguette that is not too skinny – you want to have enough bread real estate to fully pack your sandwich with all the delicious ingredients.

Are the ingredients listed in this recipe meant to be followed exactly?

Well, it’s a sandwich, so there are certainly liberties that can be taken. If you want more tzatziki, go ahead and add more. Less feta cheese? No problem! (actually, we think that’s a problem, but that’s just us! 🙂 ). And, if you are like one of our husbands who prefers Dijon mustard in his sandwich and preferred his arugula replaced with romaine lettuce – you can do that too! Consider this lamb sandwich a jumping off point for your sandwich creations. Although, we do think you can trust us and try the flavours we have put together for you – they are amazing! 🙂

Ingredients

  • 1 6 inch baguette, sliced in half lengthwise
  • 4-6 slices cooked lamb
  • 1 tbsp tzatziki
  • 2 - 3 tomato slices
  • 4 - 6 slivers of red onion
  • 1/4 cup crumbled feta
  • 2 jarred pepperoncini peppers, sliced into rounds
  • 2/3 cup arugula
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1/4 tsp dry oregano

Instructions

  • In a small bowl combine the olive oil, lemon juice, and oregano and then combine this mixture with the arugula. Toss to combine well.
  • Warm up the lamb in the oven or the microwave, being careful not to over heat it (you don't want it to dry out).
  • Begin to assemble your sandwich. We do it in the following manner:
    Spread the tzatziki onto one of the baguette slices. Top with the lamb, then add the tomato, red onion, crumbled feta, pepperoncini peppers and the arugula salad.
  • Enjoy!
