Watermelon and feta bites

Watermelon and feta bites drizzled with balsamic glaze

The pairing of watermelon and feta, usually served as a salad, is gaining in popularity and there is a good reason for that! The fresh, sweet crunch of watermelon and the salty creaminess of feta cheese is a perfect combination.

Although we have posted the requisite watermelon and feta salad (with grilled watermelon no less!), we thought it would be fun to serve this great combo as an appetizer.

Topped with a balsamic glaze, this crumbled feta and watermelon meze is like a party in your mouth, and a welcome addition to any gathering! We hope you love it.

Is it best to use seedless watermelon in this recipe?

We are not opposed to watermelon with seeds. In fact, in a way we prefer it. Big bites of juicy watermelon that cause watermelon juice to drip down your chin and a mouth full of seeds that you have to spit out; this is a scene from our childhoods.

Still, in this recipe best to use seedless watermelon. Dealing with seeds here would take the fun and the convenience away from these two-bite appetizers.

How to make watermelon and feta bites:

  1. Cut watermelon into one or two bite cubes.

2. Using a melon baller, scoop out some of the watermelon on the top of your cube.

3. Fill the hollowed out space with crumbled feta.

4. Top with balsamic glaze; we like to use a fig balsamic glaze, but any glaze will do!

5. Serve and enjoy!
